Popular US Chain Famous For Its Sandwiches And Burgers Set To Launch In Australia Best News Ever

A popular US restaurant chain, famous for its gourmet egg sandwiches and burgers, is finally opening its first store in Australia.

Eggslut started as a food truck in Los Angeles in 2011, and quickly expanded around the world, with venues now operating in Japan, LondonSeattle and vegas.

Now the American cult-favourite restaurant is heading Down Under, launching its first outpost at Crown Perth under the new name Burgers by ES.

The new name might not come as a surprise – as it was reported in 2018 that a Queensland business owner tried to register his café Eggslut – not associated with the US chain – but the application was rejected because the name was deemed ‘offensive’.

Burgers by ES will be the first to open at Crown Perth as part of the property’s ‘Urban Food District’, a premium international food hall set to launch in February 2026.

The new venue will serve its fare throughout the day, from breakfast to late night, with specialty burgers added for all-day dining.

Aussies will get to try the world-famous menu items – including classics like the ‘Gaucho’ or the ‘Fairfax’, a sandwich made with soft scrambled eggs and chives, cheddar cheese, caramelised onions and sriracha mayo in a warm brioche bun.

In addition to these famous dishes, Burgers by ES will introduce new, never-before-seen menu items to the Australian market.

‘We are delighted to continue to bring new international concepts and brands to our guests, whilst showcasing outstanding local vendors,’ Crown Perth CEO Brian Pereira said.

‘All the new venues that will join Crown Perth’s renowned food and beverage offering are exceptional, and we are excited to share them with the public in the New Year.’

Eggslut co-owner Andy Lee said he is excited to bring the Burgers by ES concept to Australia.

‘From our humble LA food truck beginnings to now, we’ve always believed that a simple ingredient cooked thoughtfully can create memorable moments,’ he said.

‘This opening is a celebration of that – good burgers and eggs, bold flavour, and a whole new breakfast-and-beyond experience for Australia.’

Recruitment is now underway to fill than 100 new roles that will be created when the venues open, further boosting the number of employees at the state’s largest single-site employer.
